In the lands that surround this population center, the vine crops are the ones that populate the landscape, but, if we go into the nearby Sierra del Carche, considered a Protected Natural Area, we find species of flora and fauna that proliferate in a vegetation that It is distinguished by the presence of thyme, crags, esparto, lavender, lavender or conifers such as pine. Here you can also find a very rare species in the region such as bearberry, a bush that produces small edible red berries whose leaves are used in infusion as an astringent or disinfectant. The most interesting fauna are birds of prey such as the eagle owl, the golden eagle, the peregrine falcon or the short-toed and booted eagles, and mammals such as the wild cat, foxes and wild boars. The climatic conditions of the region, such as the average annual temperature, the lack of rainfall and the number of hours of sunshine per year, as well as the characteristics of the soil, limestone and poor in organic matter, make the cultivation of the vine favorable, being the wine activity the engine of the economy of Cañada del Trigo. These wines have a graduation that ranges between 12º for reds and 11º for rosés. The festivities in Cañada del Trigo are celebrated from August 3 to 15 in honor of its patron saint, the Virgen de los Remedios. The party program includes a Folklore Festival with invited groups, a neighborly dinner, a street parade and a popular lunch. The nights are enlivened with musical festivals. On the 15th, the big day in the town's festivities, a parade is held in the morning, lunch and Holy Mass. The most characteristic product of this district is the Queso al Vino, which has a designation of origin. It is a fatty cheese whose paste is pressed and washed but not cooked. The tradition of the ancient shepherds of the Altiplano area obliges, almost morally, to subject the cheese to these short baths of salt and double paste wine. The paste is compact when cut, white in color, with some small eyes and a creamy and elastic texture. With a slightly acidic and slightly salty taste, it gives off a mild aroma. It is a cheese that can be eaten fried with tomato, if it is fresh, or served as a tapa. The wine with which this cheese pairs is typical of the regions of Jumilla and Yecla.
